Just because your away in your camper doesn’t mean you shouldn’t eat well. In fact, I eat better in the camper than I do at home, probably because I have more time to cook. This yummy but super healthy Brownie recipe takes less than ten minutes to prepare.

No oven is needed, however you will require a pestle and mortar. They don’t contain any flour, egg, butter or refined sugar! Read on to learn how to create your perfect camper Brownies ……
Ingredients:
1 cup of walnut halves
1 cup of dates (deseeded)
4 to 5 tablespoons of cocoa powder
Chocolate Frosting (this is an optional extra which I’d highly recommend!)
2 tablespoons of coconut oil
A quarter cup of cocoa powder
2 tablespoons of maple syrup
Recipe
Step 1 – grind the walnuts in a pestle and mortar, they can be small pieces or completely ground down, your choice. Empty the pestle and mortar. (This can be done in a food blender but unless you have an all singing dancing camper you’ll have to use the old fashioned method).
Step 2 – Deseed the dates. Then grind them in the pestle and mortar.
Step 3 – In a bowl add the walnuts, dates and cocoa powder and continue to mix until sticky. It should hold together and look like dough. If it’s a bit dry or not sticky, add a couple of tablespoons of water. Taste. To make it more chocolatey add cocoa powder or to make it more sweet add more dates.
Step 4 – Find a contain at least two inches deep and line with baking paper or foil. Spoon the mixture in the container.
Step 5 – To make the chocolate frosting mix the coconut oil and cocoa powder in a bowl until smooth.
Step 6 – Add the maple syrup to the mix (always add this last). Once thoroughly mixed spread the frosting over the brownies.
Step 7 – Add the brownies in the fridge or cool box to set.
Step 8 – ENJOY!
